Sweet potatoes make for a hearty meat substitute and allow you to have yummy, stomach filling tacos.

Serves: 4 servings
Ingredients
  • 5 large sweet potatoes
  • 1 yellow onion
  • 3 garlic cloves
  • 2 Tbsp olive oil
  • 1 jalapeno-deseeded
  • 2 red bell peppers
  • 2 tsp sea salt (separated in half)
  • 1 tsp spanish oregano
  • ½ tsp paprika
  • ½ tsp black pepper
  • 1 tsp lime juice
  • ¼ C cilantro
Instructions
  1. Preheat the oven to 425℉
  2. Wash the potatoes and cut into small pieces. You can leave the skin on.
  3. Cover them with 1 Tbsp of olive oil and 1 tsp sea salt.
  4. Toss
  5. Place on a baking sheet and cook for 20 minutes
  6. While baking, dice the onion, garlic, bell pepper, and jalapenos
  7. Heat a saute pan on medium heat
  8. Add 1 Tbsp olive oil. Heat for 30 seconds
  9. Add the onion and cook for 1 minute
  10. Add garlic, oregano, paprika, black pepper, sea salt
  11. Cook for 1 minute
  12. Add the jalapenos and bell pepper
  13. Cook for 5 minutes
  14. Add the baked sweet potatoes
  15. Fold together
  16. Top with lime juice and cilantro
  17. *Optional: add black beans, radishes, diced tomatoes, shredded red cabbage, green onions, extra cilantro
