Pumpkin Chocolate Chip Muffins

So, here is our recipe for pumpkin-y, chocolatey goodness. Enjoy!

Easy pumpkin muffins that will be sure to impress your senses and guests.
Recipe type: Breakfast
Serves: 24 muffins
  • 3 C GF flour
  • 1 ½ teaspoon potato starch
  • 2 ½ teaspoon baking soda
  • 1½ C applesauce
  • 1 C sugar
  • ½ C date paste
  • 2 teaspoons ground cinnamon
  • 2 C pumpkin puree
  • 1 teaspoon ground ginger
  • ½ teaspoon nutmeg
  • ½ teaspoon fresh ginger zest
  • 1 teaspoon lemon zest
  • 12 oz. chocolate chips
  • 1 C. chopped walnuts
  • 4 eggs (room temperature)
  1. Preheat oven to 350 degrees.
  2. Line 2 muffin pans with muffin tins.
  3. Combine flour, cinnamon, salt, nutmeg, ground ginger, potato starch, and baking soda in a bowl. Set aside.
  4. Mix applesauce, sugar, and date paste until blended.
  5. Add pumpkin puree.
  6. In a separate bowl, whisk the eggs together, then pour into the sugar mixture.
  7. Add the ginger and lemon zest to the puree mix.
  8. Slowly fold in the flour mixture.
  9. Fold in the walnuts and the chocolate chips.
  10. Pour into lined muffin pan.
  11. Bake for 20-25 min.
  12. Remove from oven and allow to cool completely.
  13. Enjoy!
