Gluten Free Pumpkin Bread

Especially during the fall months when everything is pumpkin flavored, we begin to crave pumpkin treats and baked goods. Do you get that craving too? Whether or not you do, we wanted to share a recipe that has become a household staple for the both of us. GF Pumpkin Bread
Moist and delicious gluten free pumpkin bread!
Recipe type: Bread
Serves: 2 loaves
  • 2.5 C GF flour
  • 4 eggs (room temperature)
  • 1 C melted butter (room temperature)
  • 1 ½ teaspoon arrow root powder
  • 2 ½ teaspoon baking soda
  • 1 C applesauce
  • 2 C sugar
  • 2 teaspoons ground cinnamon
  • 2 C pumpkin puree
  • 1 teaspoon ground ginger
  • ½ teaspoon nutmeg
  • ½ teaspoon fresh ginger zest
  • 1 teaspoon lemon zest
  1. Preheat oven to 350 F.
  2. In a large bowl, blend together eggs, pumpkin puree, sugar, applesauce, melted butter.
  3. In a smaller bowl, mix all dry ingredients.
  4. Add dry ingredients to wet mixture.
  5. Blend together until smooth.
  6. Pour into two non-stick and oiled 9 X 11" pans.
  7. Bake for 50-55 minutes. Place a toothpick in the dough to see if the bread is ready before taking it out of the oven.
  8. Cool for 1 hour before removing the bread from the pan.
